October Coffee of the Month comes from La Joya farm, located in Apaneca region in Santa Ana, Salvador. Owned by Ignacio Fernandez it's located 1.250m a.s.l. The only variety grown here is Bourbon and its coffee trees are growing happily in shade, beneath other, bigger trees.
Ignacio's approach to coffee and processing is very innovative and the entire production is closely monitored for quality control. Parts of the fruits are segregated by harvesting day and then is made decision which process certain batch is going to go through. Choice depends on the potential on each of the batches. The batch that we roasted was soaked in water for the whole night after skin and pulp was removed mechanically. Drying process took place on concrete patio and the entire process was controlled so the drying will be equal across all the beans.
Ignacio cares about environment and constantly improves processes on the farm so they'll become more sustainable.
